Chipotle Pepper Chicken Sausage Quesadillas

Chipotle Pepper Chicken Sausge
2 flour tortillas
2 links of Chipotle Pepper Chicken Sausages, sliced thin on the bias
¼ C diced red bell pepper
¼ C diced yellow bell pepper
½ C shredded cheddar cheese
¼ C diced red onion
½ avocado, diced
¼ C cherry tomatoes, diced
Cilantro for garnish
- Lay two tortillas side by side. In a medium non-stick skillet, sauté the Chipotle Pepper Chicken Sausage, red bell pepper, and yellow bell pepper with a touch of water for 5-7 minutes until slightly browned.
- Spread mixture on top of one tortilla, and then sprinkle the shredded cheese. Place the other tortilla on top, and place on a pre-heated panini press sprayed with cooking spray.
- Cook until heated through, then slice and serve into 6-8 pieces.
- Garnish with diced avocado, diced cherry tomatoes, and cilantro.
